This is Your Recipe for Baked Buttermilk Pancakes

Baked buttermilk pancakes are perfect for slow mornings. Or, you can prepare the batter the night before, and have a delicious homemade breakfast ready to go in 15 minutes!  These warm, fluffy pancakes are a huge hit here at the farmhouse, and have already been added to the breakfast rotation. Maybe they’ll be added to yours too?

With the fluctuating temperatures here in Tennessee, my sourdough starter has been a bit finicky lately. One day we are all outside enjoying the warm sun and 70 degree temps. Next, it’s 20 degrees when we wake up in the morning. We are rounding the year mark here in our new home so, this is our first time experiencing the seasons. 

Let’s just say Sanjay (the name I have lovingly given to my starter), is not pleased. So, I’ve been on the hunt for breakfast ideas. Then, I came across a recipe for german pancakes. After giving those a try, I can tell you that we were underwhelmed. I’ve been waiting for Sanjay to snap back to life so I could create a reimagined german pancake recipe. But, alas!

Over the weekend I made a quick trip to the store for milk, and that’s when it hit me…baked buttermilk pancakes! So, naturally I grabbed some buttermilk on the spot, and headed home to create a new breakfast recipe. 

Your Ingredients List

2 cups all purpose flour

1 ¾ cups buttermilk

1 egg

2 tbsp vegetable/ coconut oil

2 tbsp brown sugar

1 tsp vanilla extract

2 tsp baking powder

1 tsp baking soda

1 tsp salt

How to Make Baked Buttermilk Pancakes

Preheat the oven to 400 degrees fahrenheit.

Grease your baking pan. I used a cast iron skillet for this recipe, and placed it in the oven with a bit of coconut oil while the oven was preheating. The amount of coconut oil I used to grease the skillet is not included in the ingredients list above. But, you can use 1-2 tablespoons to coat the bottom of the pan.

Add all of the ingredients to a medium size bowl or stand mixer, and mix well.

Spread mixture evenly into baking pan/cast iron skillet.

Place the baking pan/skillet in the oven for 15-18 minutes. And, voila! 

Serve, and enjoy!

Instructions
 

  • Preheat the oven to 400 degrees fahrenheit.
