How to Make a Delicious Sausage Tortellini Soup

COLD WEATHER CALLS FOR SOUP

Winter is finally upon us. Perhaps you were in part of the country that experienced the historic arctic blast too? Here in Tennessee we woke up to temperatures in the single digits that felt like negative 10. My brother in Orlando had temperatures in the high 20s. It was cold.

So cold, our pipes froze on Christmas Eve. This is something I have never experienced, and hope to never experience again. However, we kept our spirits high, with hopes that a Christmas miracle was headed our way on the 25th.

But, when we woke up to frozen pipes yet again on Christmas, it was starting to settle in. Another day without a shower, another day without running water. Ugh!

Mid-afternoon I was laying in bed after the whirlwind of Christmas morning when I heard water trickling. I shot up, ran to the bathroom and immediately tried out the sink. Nothing. Then, the shower. Nothing yet again. 

That’s when Justin decided to check the crawlspace, and the chaos began. A pipe had burst and already left a considerable amount of water in the crawlspace. We contacted the water company for an emergency shut off, cleaned up as much as we could, and headed to a hotel for the evening.

Long story short, you never realize how much of a luxury running water is until you have none. Thankfully, we were able to call a plumber the day after Christmas who fixed everything up, good as new (for now). This farmhouse of ours seems to be in charge of the renovations plans. 

While we were dealing with the cold temperatures, this recipe, Sausage Tortellini Soup, is one Justin requested when things returned to normal. It turned out so good this time, I wanted to share it with you!

YOUR Ingredients List

1 lb ground pork sausage
5 cloves garlic
1 medium yellow onion
2-3 celery stalks
4-6 baby carrots (or more)
4 tbsp. extra virgin olive oil
Spices: salt, pepper, garlic powder, parsley, basil, umami seasoning, bay leaf
4 cups vegetable broth
1 28 oz can crushed tomato
1 15 oz can great northern/cannellini beans
Tortellini of your choice

HOW TO MAKE SAUSAGE TORTELLINI SOUP

Drizzle two tablespoons of extra virgin olive oil into your dutch oven, and cook one pound of ground pork sausage. Once cooked all the way through, scoop out and set aside.

Add 2 more tablespoons of extra virgin olive oil to dutch oven, along with chopped garlic, yellow onion, carrots, and celery.

Once carrots have softened, add all spices except bay leaf.

Return crumbled sausage to dutch oven with veggies. Mix well.

Add great northern/cannellini beans, and crushed tomato. Mix well.

Add vegetable broth, and bay leaf.  Bring to a boil. Then let simmer for 10 – 15 minutes.

When ready to serve add tortellini to Dutch oven. Follow package directions.

Top with fresh basil, and parmesan cheese. 

Serve and enjoy!

  • 1 lb pork sausage
  • 5 cloves garlic chopped
  • 1 medium yellow onion chopped
  • 4-6 baby carrots chopped
  • 4 tbsp extra virgin olive oil
  • 4 cups vegetable broth no salt/low sodium
  • 15 oz cannellini beans or great northern beans
  • 28 oz crushed tomato
  • salt, pepper, garlic powder, parsley, basil, umami seasoning to taste
  • 1 bay leaf
  • 12 oz package tortellini

How to Make Sausage Tortellini Soup

  • Once carrots have softened, add all spices except bay leaf.
  • Return crumbled sausage to dutch oven with veggies. Mix well.
