Winter seems to be hanging on this year, even if Mrs. Thaw seems to appear sporadically here and there. One day it’s 27 degrees, and the next 65. And, most of us are left scratching our heads wondering why. 

Especially those of us tasked with potty training a puppy. The morning after we were gifted a 65 degree day, I ran outside in a tank top, faultily putting on a jacket, with a puppy in one arm. Only to be shocked by the cold snap that continues to dominate our weather forecast. 

Even if Jack Frost and Mrs. Thaw (yes, an Elsa Beskow reference) seem to be thronged in a wrestling match. I am grateful that the cooler temperatures are hanging on for a bit longer. Time seems to move a bit slower when the weather gets colder. Even when the longer stretches of daylight promise us that warmer weather is on its way.

That’s because I get to spend more time experimenting in the kitchen. And, if I am being honest, what I’ve been enjoying most is trying out recipes in my cast iron skillet. Like this French toast bake…

Tips

  • When you check in on your french toast at the 15 minute mark, either brush or spoon some milk onto the brown sugar to help it along. 
  • Do NOT skip prepping your cast iron. The prepping phase ensures your cast iron is a non-stick surface. Trust me, your clean up will be a lot easier.
  • Make more than you think you need. Especially if you have houseguests or plan to host a brunch. Leftovers heat up well at 375 degrees, for 10-15 minutes. 

How to Make French Toast Bake

Preheat oven to 425 degrees Fahrenheit to “prep” your cast iron skillet. Place cast iron skillet in oven for 10 minutes.

While oven is preheating, and skillet prepping in the oven, mix wet ingredients – eggs, milk and vanilla.

In a separate bowl mix dry ingredients – brown sugar, cinnamon, and salt.

Then, slice your french bread.

Once your cast iron skillet is prepped, remove from the oven and drizzle with Extra Virgin Olive Oil, Coconut Oil, or oil of choice. Lower the oven temperature to 375 degrees.

Begin to layer the bread, dry ingredients, and finally, the wet ingredients.

Place French toast in the oven for 15 minutes. Check progress, and return to the oven for (up to) an additional 10 minutes.

  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 5 eggs
  • 1 cup milk
  • 1 tsp vanilla

Instructions
