Hi friends! Guess what? I ran to the store today to pick up a fall wreath for our front door!! It’s my first fall décor purchase of the season (excuse me while I do my happy dance). Although… I am having a hard time believing that Labor Day is just a few short weeks away. What about you?
Resuming a summer state of mind (I said that in my best robot voice, in my head, lol)- do you remember when I shared a week’s worth of meals for my menu planning process a few weeks ago? Well, after weeks of static meals, we are looking to switch things up a bit for dinner here at home.
And, with the transition into the new school year, you might be ready for quick, easy + delicious chicken recipes to add to your weeknight rotation too, am I right?.

Yummy Chicken Recipes for Dinner
Sheet Pan Chicken Sausage with Broccoli, Peppers, and Potatoes (Nourish and Fete): This recipe is so easy, and tasty too. I usually add a few chicken tenders to the sheet pan because Nora isn’t the biggest fan of sausage. I also like to double up on the broccoli instead of adding in the potatoes. It is so good!
Creamy Coconut Lime Chicken (The Almond Eater) – Yum, yum, yum! Lime is my absolute favorite citrus so, when I found this recipe on Pinterest, and saw that this is a 30 minute meal, I was sold. The girls ate every last bit of this without one complaint. And, I may have gone back for seconds!
Chicken Parmesan Sliders (I Am Homesteader) – I definitely shared this recipe before because it is that good! My husband and I absolutely love this recipe. It’s so quick and easy to assemble, and so flavorful too. You have to try it!
Sheet Pan Korean Chicken and Vegetables (Dinner then Dessert) –This recipe is great for the whole family, and if you like spicy meals, this is the perfect opportunity to reach for your favorite Siracha sauce. We usually make this with basmati rice but, I’m sure you can make it with ramen noodles as well.
Sun Dried Tomato Pasta with Chicken and Creamy Mozzarella Sauce (Julia’s Album) – There are quite a few ingredients to this dish however, I find they are mostly pantry staples here in our home. The one thing I may need to run to the store for is sun dried tomatoes/ half + half. We don’t usually have those on hand, especially the half and half since I stopped drinking coffee this May. This chicken recipe will definitely add flare and flavor to your pasta night. And, if you have picky eaters like we do here at home (Nora does not like sauce), simply serve the sauce on the side.
Sheet Pan Chicken Fajitas (Meal Prep on Fleek) – What can I say? I am a sucker for sheet pan recipes, especially during the week. This recipe is absolutely delicious so, if you’re ready to spice up your taco Tuesday, you should definitely give it a try. Or, is it Fajita Friday?! Hmmm….
Lebanese Lemon Chicken (A Calculated Whisk) – Ready in 30 minutes, this fast and flavorful paleo dinner is perfect for Fall! If I am out of fresh thyme or rosemary, I usually just grab my essential oils to finish off this meal. Yum tum, as Sadie would say 🙂
